The Most Delicious Whole30 Soup Recipe September 4, 2018 | I swear to you guys I’ve been promising to blog this Whole30 soup recipe for almost two years now…I cannot believe that I’m finally doing it! This Whole30 Baked Potato Soup by far and wide my FAVORITE easy Whole30 recipe. What I love about it is that it’s full of flavor, easy to batch make, there are tons of variations that you can add to it and above all it’s a very very healthy weeknight meal for my family. It also freezes well and is my go to meal to bring to new mamas with babies because its dairy free. This recipe is such a winner and is always in my rotation, especially during the Winter. The base is coconut milk and I was very hesitant at first because I do no like coconut milk, but you CANNOT taste it. It simply adds the creamy, comforting texture that you would expect from a potato soup. Whole30 Soup Recipe | What You’ll Need: 6-7 Baking Potatoes (peeled and diced) 1 Large Yellow Onion (chopped) 1 Tbsp Minced Garlic 1 Tsp Ghee 32 oz Broth (I normally use Chicken, but you could use Vegetable instead for a vegan option) 2 Cans Coconut Milk (I hands down recommend Trader Joes. I’ve tried so many brands and the TJs brand definitely makes the creamiest base) 1 Can Water Garlic Powder, Onion Powder, Black Pepper, and Salt (to taste) 5-6 Slices of Bacon (cookied and chopped) Chopped Green Onions Whole30 Potato Soup | Directions: Peel and dice potatoes and onion. If you want to do this ahead of time make sure to store them in the fridge, fully soaking in water. Drain that water once you are ready to add them. Over a medium flame, heat ghee in your soup pot (I’ve used THIS ONE for 8 years now and love it!), add onions and garlic and brown them until transparent. Add in stock, coconut milk, water, potatoes and seasoning. Bring to a rolling boil. Once boiling, reduce the heat and cover. Let simmer until potatoes are cooked, stirring frequently. This normally takes about 45 minutes. There are two ways to add the bacon, either cook and dice a few slices and add it to the soup during the last 20 or so minutes of cooking (adding some flavor into the base) OR cook and crumble on top when ready to serve. I always taste test the base about 30 minutes into cooking and will add additional seasoning if necessary. This Whole30 soup recipe is seriously one of our favorite Whole30 meals and one that the entire family eats! Consider this a great Whole30 soup base too and feel free to add to it and put your spin on it. Here’s how I’ve served it before (all still Whole30 compliant): -Add browned, drained ground meat for more of a hamburger soup -Add celery and chopped baby carrots for more of a veggie soup -Add shredded chicken for a hearty winter soup. -Add Nutritional Yeast flakes on top for more of a cheesy flavor.
