Low Carb Broccoli Salad January 21, 2019 | Morning, friends! I promised more easy recipes in 2019 and here I am delivering! As most of you know, I am actively doing the FASTer Way to Fat Loss and am really loving the carb cycle. The days that took the most time to get used to were definitely Low Carb days. I’ve admittedly never watched or counted carbs (bad move), so really knowing which foods to incorporate into those days without getting so bored was a little tricky. Over Christmas, my mom made her famous broccoli salad, and as I was inhaling it, I started to break down the ingredients in my head and really understand that I could reconfigure a few things to make it low carb. Well, I came home and that’s exactly what I did—and it’s DELISH! It only has 15g/carbs per serving and is crunchy and satisfying as a meal. The macro breakdown is ideal for low carb days, higher in fats, a decent amount of protein and lower in carbs. You could also have it as a side dish with a clean protein. Trust me, you need to try this! *Disclaimer: FASTer Way to Fat Loss does advise that you avoid dairy at least through your first round and this does contain dairy. I’ve gone dairy free many times and definitely have a sensitivity to it, so at this point I know exactly how much I can have. It’s all about extreme moderation for me, but you need to decide that for yourself. Per serving, this salad has very small amounts (1/3 Tbsp sour cream and 1/8 C cheese, per serving). Ingredients: Broccoli (I used the 12 oz bag of florets) 1/2 Purple onion (finely chopped) 1 tbsp light sour cream 2 pieces of cooked bacon (finely chopped) 2/3 cups pecans (this is where most of your fat and calories come from, so if you are short on fat macros, you can up this portion) 1 tbsp Mayo (I use the avocado oil based kind, to ensure healthier fats) 1/2 c finely shredded cheddar cheese 1 tsp sugar ***If you are making this for a low carb day and end up having left overs and want to transition it to a regular macro day recipe, simply add raisins and/or chopped apples, for a healthy dose of carbs Add all ingredients to a bowl and mix. Doesn’t get any easier than that, right?! Stores well in the fridge and is such a yummy and filling meal and healthy on the go lunch!
