Easy Weeknight Dinner Recipe with JET.com November 21, 2017 | If there’s one hour during the day that I’m allowed to admit that I absolutely dread (and actually get anxious thinking about)…it’s witching hour. For my girls that normally occurs between 5-6p.m., which conveniently coincides with when I’m supposed to be cooking dinner and almost always ends up in all of us melting down, giving up, and heading to the nearest drive thru for dinner. I’ve been looking for any and every way to make that time of day less stressful for me and the kids and thankfully I have accumulated a handful of recipes that I can depend on to be easy, fuss free, healthy and delicious. Today, I’m sharing one of those easy weeknight dinner recipes, plus a way in which I’m able to make it even EASIER. This is a total #momwin, friends! I recently discovered Uniquely J, which is jet.com’s new brand. They have created a mindful line of household items, sauces, oils, snacks and coffees that I was really excited to try out. When I looked through the assortment, I thought to myself that they really did create these products with a busy mom in mind, so it was only appropriate to test them out during witching hour to see if they could withstand 😉 This was my first delivery from jet.com and I wanted to include this photo to show you how detailed the packaging was. My box arrived promptly 2 days after ordering and I couldn’t get over how well done everything was. Landry’s FAVORITE dinner is spaghetti and meatballs (really just meat sauce, but whatevs) and I try to make it for her at least once every 2-3 weeks. The problem is that for Dan and I it always feels very heavy when served with noodles. Recently, I substituted a spaghetti squash instead of the noodles and (while she definitely noticed) she seemed to like it…WIN! I’m also obsessed with roasted butternut squash, so I just roast some pre-chopped squash and add it on top of our spaghetti for some extra goodness. To make this recipe even easier, I ordered some staples from jet.com to have on hand in my pantry so that I can make it at a moment’s notice. First of all, do your kids play the…I’M STARVING game while you’re cooking dinner? It’s Landry’s favorite game to play lately and it was making me crazy. To help keep my sanity, I usually set out a healthy snack while I’m cooking that I know she won’t fill up on before dinner. I ordered this Uniquely J mild salsa and served it with banana chips and she happily noshed on it next to me while I cooked dinner. The salsa is organic and so yummy…not too spicy for kids and a great pantry staple. Uniquely J Mild Salsa Ok here’s my recipe for healthy spaghetti and meatballs! This is normally enough for 2 nights, which is another win in my book. What You’ll Need: Uniquely J Avocado Oil Uniquely J Olive Oil Uniquely J Tomato Basil Sauce Butternut Squash (to make my life easier, I usually spring for the pre-chopped version) Spaghetti Squash Bellpepper Onion 1lb Lean Ground Meat (could also sub Turkey) Seasoning (I always add extra garlic + onion salt to jar sauce) I start by splitting the spaghetti squash in half, giving it a quick drizzle of extra virgin olive oil and a dash of salt and pepper, then popping it in the over face down on aluminum foil to bake. Like I mentioned, I normally opt for pre-chopped everything, because honestly I don’t have the time to spend prepping and chopping and it’s well worth the extra few bucks for me to not have to go through the hassle. I toss the butternut squash in avocado oil or extra virgin olive oil and season with garlic powder, onion powder and salt and pepper. Give it a good stir then spread it evenly on a baking sheet lined with aluminum foil and put it in oven with the spaghetti squash to bake. My secret to making any spaghetti sauce taste super fresh is sauteing a chopped onion, bell pepper and about 1tsp of minced garlic in a dollop of butter. Again, if I’m in a pinch I’ll grab a pre-chopped tub at the grocery store for my recipes that week. Cook down until the onion is transparent. Once the veggie mixture is cooked, add the ground meat and brown it until cooked through. I always drain this mixture once done. After that, add your jar of sauce and cook on low heat to simmer for about 10 minutes. That’s literally it. When the spaghetti squash is done, take a fork and scoop out the “noodles,” top them with the sauce mixture, and then with the baked butternut squash and some fresh parm cheese. Such a healthy and delicious dinner that’s Landry approved! Uniquely J Tomato Basil Sauce It’s so yummy and light, but still tastes like comfort food for a cold Winter night. I also like it for this time of year and am thankful to sneak in a healthy recipe here and there during Holiday indulging. Also, if you aren’t on the roasted butternut squash train…it’s time to give it a try. I’m not kidding, I’ll roast an entire bag and eat it for lunch. It’s SO good! Needless to say, they lasted a whopping 24 hours in our house…so good! Mini Oat + Cranberry Crisps | Ordered these to have with my morning oatmeal. YUM! Overall, I was really impressed with Uniquely J by jet.com. Like I mentioned, I feel like they developed this line with busy moms in mind.
