EASTER WEEKEND 2014 April 21, 2014 | I hope that you guys had an amazing Easter weekend, filled with lots of love and laughter and that you are recovering nicely from the sugar high that was your Easter basket. We had a great weekend and it actually felt long and didn’t feel like it flew by, which is such an amazing feeling. Although we couldn’t spend Easter with our families this year, we managed to have a fun weekend here in Charlotte. D was off on Friday and we all slept in until 9am….I thought that the clock was wrong…but it felt amazing. We did some DIY projects for the One Room Challenge that I will share on Thursday and then headed out for a late margarita lunch. Saturday I actually woke up way earlier than anyone else, so I fixed coffee and fired up the mixer. Sometimes I forget how much I actually like to bake. I bought the Wilton mini cake pans a while back and have been dying to try an ombre cake. So, I winged it and it was actually much easier than I expected. I just divided the batter into 5 different bowls and added more red gel food coloring each bowl. I loved the result, but next time might use two boxes of cake mix instead of just one to make the layers fluffier. The key to getting the color is trimming the sides of each layer. On Easter Sunday we got up super early and brought LK down to see her Easter basket. I thought that it would be totally wasted on her and she would be super uninterested, but she loved it. She carefully took out each treat and examined it thoroughly. Of course, her favorite things were the plastic eggs…but whatevs. We actually made it to early mass and found a seat….a miracle in and of itself. LK was pretty good throughout and was waving at any/everyone who would wave back. She generally does well for 30 minutes then we walk to the back with her, so I was very happy she sat in the pew the entire time. Mass was beautiful and there was an amazing message that makes total sense in relation to life and Easter…. “The worst is not the last….” This really hit home and is such a great reminder when you think that you just can’t get a break. He rose from the dead and every situation ends in joy some how, some way. Here are a few pics from Easter Sunday…. After mass, we headed to brunch at a dear friend’s home in Charlotte. She was a fabulous host and put together the most delicious brunch for us and another couple who does not have family in CLT. She also just started a fun blog about how she manages to feed her family such a healthy diet. She’s kind of a rock star in the kitchen, so check her out for fun and easy kid friendly meals.
