Cream Cheese + Pumpkin Stuffed French Toast August 28, 2014 | Um yes, it’s as good as it sounds, too! I have to admit, this year I hopped on the pumpkin train early. Like mid-August early, which is usually totally out of the question for me, as I like to save my Fall delights for when there’s a little chill in the air and (at the very least!) after the first college football game. This year I threw all caution to the wind and went for it, I mean who could resist?! I’ve had a thing for French Toast lately, so this recipe really combines all of my foodie cravings into one dish French Toast + Pumpkin + Cream Cheese…Oh My! This is the perfect dish to serve up for weekend guests or for a pre football game brunch. The sweet and savory flavors are perfect for Fall! What you need: 1 Loaf of crusty bakery bread (I used a cinnamon raisin loaf from my Bakery) 2 cups Milk 1/4 cup Maple syrup 1 dozen Eggs 1 tbsp Vanilla extract 1 package Cream cheese 1/2 can Pumpkin puree 1/4 cup of Powdered sugar (optional) 1. In mixer, whip together cream cheese and pumpkin (I also added powdered sugar) 2. Beat together with a whisk the eggs, milk, vanilla, and maple syrup 3. In a greased 9×13 casserole dish, arrange your first layer of bread slices and pour half of the egg mixture over them. 4. Spread all of cream cheese mixture over this layer. 5. Place the remaining bread slices evenly over the first layer and cover with the remaining egg mixture. 6. Cover with foil and refrigerate overnight. 7. In morning, preheat oven to 375 and bake for 35-45 minutes or until the top is golden and crusty. 8. Serve with maple syrup and sifted powdered sugar. Yum!! Enjoy 🙂
