DIY Fresh Fruit Sorbet: #DIYSummerSchool July 9, 2015 | Welcome back to another week of DIY Summer School, where 8 of us bloggers share a DIY project according to a schedule and invite you guys to link back up with us! This week our host Beth (designPOST interiors) tells us that the theme is “Wildcard” and gave us the green light to get crazy and share a DIY in whatever category we choose. I decided to start my July 4th prep early and work on a fun dessert DIY that’s as yummy as it is pretty! These sorbet cups were easy to put together, are a great dessert to serve on a warm summer day and are healthy and light. Enjoy… What You Need: 2-3 pounds of fresh fruit (strawberries in this case) 1 c Sugar 1 c Water 3-4 tbsp Lemon Juice Mint leaves for garnish 5-10 Lemons to hollow out for fruit cups (remember every lemon makes TWO cups) How To: 1. Hollow out the lemons. We used a paring knife to cut around the flesh and as close to the rind as possible, then simply spooned it out. Save some of this juice for later. I placed the hollowed out lemons into the freezer so that they would keep the sorbet cold longer once served. 2. Cut up the strawberries into bite size pieces and place into food processor or blender. 3. On the stove over high to medium heat, combine water and sugar until all of the water is absorbed (stirring frequently) and a simple syrup has formed. 4. Let syrup cool. Once cooled add lemon juice and then add to blender. *NOTE* My food processor is fairly small, so I had to split mine into 3 separate batches. I separated both the berries and syrup into 3 equal parts and combined them batch my batch. 5. Puree until combined completely and smooth with no lumps or chunks of fruit. 6. I placed mine into a freezer safe glass container and froze it for 5-7 hours. 7. Once frozen, I took it out and let it thaw a little so that it was easier to serve with an ice cream scoop. The lemons are perfect for two heaping scoops of sorbet and the limes hold one scoop 8. Garnish with fresh mint and fruit and serve! Trust me, these will be a huge hit at your July 4th BBQ and there are so many different combinations that you can try!
